1. Spelt Porridge
For a power breakfast eat cooked cracked spelt porridge; this century old tradition is said to produce the Southern Germans' proverbial productivity and good humor. Spelt porridge for 2-4 persons:
1 cup coarsly-ground spelt, spelt flakes or spelt farina
2 cups of water
raisins or cranberries, if desired
2 apples, cut
2 tsp. honey, brown sugar or maple syrup,
3 dashes of Galangal and pellitory
sweet almond slivers
1 tsp. cinnamon
1 tsp. flea seeds (Psyllium)
Stir the spelt and apples into the water and bring to a boil. Cook for 5 minutes, add, cranberries or raisins, honey and spices, reduce heat, cover and simmer for 5 minutes, stirring occasionally. Serves 2-4. Serve with cinnamon, chopped almonds and flea seeds, if you like. (Add spice according to your taste) You can also mix in 1 - 3 Tbsp. soft-cooked spelt kernels.
